We're a small team of craft beer lovers! We do this because it's our passion and we feel it's the best way we can make a difference in peoples' lives. Our brewing focus is on the modern beer styles we love to drink, share and seek out. Top of the list are hazy and juicy hop-forward IPAs. We make them big on flavour and low on bitterness. We also love brewing and drinking big pastry stouts that feature dessert-like flavours such as coffee, chocolate, coconut and maple syrup. We round out our lineup with fun and exploratory sour beers where we experiment with different flavour combinations through large fruit additions and other complementary ingredients. Our goal is to turn each of our beers into a memorable experience.

Rorschach (ROAR-shack) The Rorschach test was created by Swiss-Psychologist Herman Rorschach in 1921; the test wasn’t widely used until the 1960’s. The test was meant as a way to provide data about cognition and personality variables such as motivations, response tendencies, cognitive operations, affectivity, and personal/interpersonal perceptions. The test was a complicated one with years of education required to be able to asses an individual using this method. Why in the world would we name our brewery after such an obscure test with a name that is so difficult to pronounce? As legend states our brewer one day looked into his glass of beer and out of the foam saw a Rorschach symbol appear. After this, he surmised that while beer flavours and aromas have definitive compounds and chemicals, beer tastes are subjective and individual to the person tasting them and thus Rorschach Brewing Co. was born, a place where we ask you what do you taste? We strive to have all of our guests leave a little different than when they arrived, to learn a little something about themselves, to be surprised by what they like and to break down assumptions and self-imposed limits. Like many historic breweries in Europe, we strive for Rorschach Brewing Co. to be a place where our community gathers to share experiences through our beer.

Muddy York Brewing Co. gets its name from a disparaging term used to describe the early settlement then known as York, which became the thriving metropolis of Toronto. Rainy days wreaked havoc on the city, turning its unpaved streets into impassable muddy roadways. It was a time of hard work and new beginnings, where folks took pride in their craft and built things to last. We here at Muddy York Brewing Co. feel much the same way about our beer. We take a ‘less is more’ approach to brewing. All of our beers are handcrafted, remarkably drinkable and well balanced. We take pride in the details because it’s the details that make good beers great. We look forward to seeing you here at our brewery. We’ll save you a seat at the bar.

Our five founding partner families (we did get married and had a few kids) have deep roots in the area, and though some of us may have moved (but not all of us!), our hearts live in the city’s core.
