    The Alchemist

    John and Jen Kimmich originally opened The Alchemist as a 60 seat brew pub in the village of Waterbury in 2003. After eight years of success and growing popularity, they decided to open a small production brewery in Waterbury in 2011. Not long after, Tropical Storm Irene flooded much of the state, causing widespread damage in downtown Waterbury, including the Pub. Forced to shut the Pub doors, the Kimmichs focused their efforts on the new Cannery and distributing Heady Topper locally. Pop-up truck sales, long lines in Waterbury, and a booming craft beer scene led up to the opening of the 2016 Stowe Brewery and Visitor’s Center. Today, The Alchemist operates two breweries in Waterbury and Stowe and distributes Heady Topper and Focal Banger throughout the state, with the occasional out-of-state shipment. Limited specialty beers are released at the Stowe Brewery only, where curbside beer sales have been our only public contact since March 2020.

    The Trappist Westvleteren is brewed by the monks of the Sint-Sixtus abbey. Five natural ingredients are used to brew three Trappist beers: Blond, 8 and 12. They each have their own colour, taste and aroma. All beers are unfiltered and not pasteurised, with secondary fermentation in the bottle. All this contributes to the taste and aroma. The Trappist Westvleteren is brewed and bottled within the abbey walls and only offered for sale on site. Wooden crates of 24 bottles in the Abbey itself, and a small package of 6 bottles in the “In de Vrede” meeting centre. The Trappist Westvleteren meets the strict requirements of the International Trappist Association, and therefore also carries the “Authentic Trappist Product” trademark.

    We are a small, family-run, saison-focused brewery in Lombard, Illinois brewing 1.5-barrel batches. Saison is a style that was born in the Belgian and French countryside, traditionally consumed by field laborers. We believe saisons should be dry, relatively low in alcohol, highly carbonated, and thirst quenching. Our saisons take inspiration from Old World traditions, but also incorporate American and other New World fruit and hops. We emphasize the use of oak and fermentation with yeast and bacteria outside of traditional brewer’s yeast. We use Midwestern ingredients when possible. Our individual beers are based on concepts and, like wine, will vary from batch to batch. We believe in subtlety of flavor and that saisons are often, though not always, enhanced by a bit of lemonade or wine-like tartness, though not by outright acidity.
