The Double Elbow is my favorite of these kludges: two back to back 90 degree elbows allow you to connect almost anything to almost anything else. Multiple planes of connectivity at your sanitizer-soaked fingertips. Double Elbow is a beer label that seeks to connect things in small but meaningful ways. We produce small batches of lager bier that pay faithful homage to continental European flavors, aromas, and textures, but that are made entirely from American-grown ingredients. Our beers are produced at Little Thistle Brewing in Rochester, MN.

    Named after its original owner, Anthony Waldmann, our brewery is housed in the oldest surviving commercial building in the Twin Cities โ€” a limestone saloon built in the fall of 1857. Since the Fall of 2017, Waldmann is once again welcome to everyone with the warmth of wood fire and lamplight. From hand-hewn woodwork to period engravings, every detail reflects the care and craftsmanship at the soul of this restored pre-Civil War originalโ€”including, of course, the beer itself. Using old-world horizontal fermenting techniques and noble and heritage hops, the Waldmann brewing team is making traditional German-style lagers with an approach to recipes and brewing processes that stay true to the buildingโ€™s 1850s heritage. Pull up an authentic steamboat chair and choose from one of several enduring styles, like Pilsener, Dunkel and Wiener. Our beer is the perfect complement to tasty bites from the kitchen, including freshly made sausages, heritage wheat pretzels, and limestone potatoes roasted under a slab of Platteville bedrock. We pride ourselves in carrying on German-inspired cooking traditions using locally sourced ingredients, whenever possible. Waldmann is a humble, memorable place โ€” full of stories and traditions that just may inspire you to make a few of your own.

    In 2019 we opened as Pig Ate My Pizza Kitchen + Brewery in a completely renovated space including our first-ever, brand-new small-batch brewery. Andy Goettsch, who was previously Chef de Cuisine at our sister restaurant Travail Kitchen and a homebrewer extraordinaire, became our Head Brewer and has since tapped hundreds of unique batches. In January of 2022, we rebranded as Nouvelle Brewing by Travail so we could more heavily feature the brewing talents of Andy, as well as our creative chef team. We are Craft Malt Certified and a Certified Independent Craft Brewery. We source local hops, malt, and ingredients as much as possible. We now have 23 rotating taps for you to imbibe when you dine in including something for everyone including light/crispy, hoppy, malty/roasty, and fruity/sour brews. Because we're a small-batch brewery, our tap list changes often.

Spontaneously fermented ales are barrel-aged and blended to provide each beer with a unique texture and an intense depth of flavor. After all this work to promulgate funk, time and patience becomes our most important ingredient.     The Starkeller Brewery + Taproom

    With the launch of the Noble Star Collection, there was a need for a separate space away from the brewery due to limitations with aging sour beers. Enter the Starkeller. This facility has not only provided a space to ferment these mixed-culture Berliner Weisse beers, but provides an additional taproom space to the town of New Ulm. The Starkeller is overflowing with rich history from Schellโ€™s with the focal point being the 1936 Cypress wood lagering tanks that were restored for the purpose of aging sour beer. After prohibition, the brewery purchased wood tanks because they were cheaper than steel tanks and they were in use until 1991 when the brewery made some updates. Since, they were stored away and the introduction of this line of beers presented the opportunity to bring them back to life. The vessels that once aged our Schellโ€™s beers were the perfect solution to age sours because the wood tanks breathe a bit of oxygen whereas steel does not. When you come to the Starkeller for a beer, you might sit at the bar made of an old copper kettle from the brewery, or might glance at the tin on the back wall that came from the farm that once stood in its place. The ten tanks that line the taproom are the next beers that might be in your glass in a year or so. Itโ€™s a unique experience that you wonโ€™t find anywhere else.
