The brewpub only opened on alternate days. Now, the business has five owners and a large staff. It produces many different beers and the latest brewing equipment has a 40 hectolitre capacity. Business owners Alessandra, Fabio, Paolo, Davide and Giampolo each play their own specific role whether in accounting, in the kitchen, running the pubs or brewing our beer!

Convivono in noi due anime: quella “popolare” e agricola, un po’ goliardica e irriverente, che si è tradotta in spontaneità e originalità, e quella tecnica e professionale, derivante da studio e continua ricerca. Ciò ha portato alla creazione di birre sempre “di carattere”, in cui si fondono insieme l’ispirazione tratta dalle storie personali e dalla natura (soprattutto nelle linea “creative” e nelle barricate), l’abilità e la conoscenza brassicola (più evidente nelle birre “in stile”) e la volontà un po’ scanzonata di proporre sempre il massimo livello qualitativo senza però prendersi mai troppo sul serio, con autoironia e divertimento, e il desiderio vivo, per ogni birra, di raccontarci sopra anche una storia, arricchire il prodotto, oltre che di bontà, anche di aneddoti e contenuti. Nome curioso, spiritoso e ben evocativo, quello de La Spilleria identifica un marchio artigianale che ha debuttato sulla scena nazionale nel 2012, insediandosi a Cassina de’ Pecchi, non piccolo (12mila gli abitanti) comune della fascia periurbana milanese (dista dal capoluogo 16 chilometri), appartenente in particolare alla zona de La Martesana, in passato coincidente con l’attuale territorio della Brianza. Si tratta di un brewpub, condotto in regime di conduzione familiare e affidato, relativamente alla gestione della sala cottura (3 ettolitri la capacità su singolo ciclo di lavorazione, per una media annua attorno ai 300), alla “mano” di Andrea Mandelli. Il quale, servendole in abbinamento con la cucina della casa, firma le diverse etichette componenti una gamma “poliglotta”, incline a parlare i vocabolari sensoriali delle tipologie anglosassoni, statunitensi, belghe e più vicine al “sentimento” italiano, avvalendosi di ingredienti tra i quali castagna e mirto.
