C’est en 1975 que l'avant dernière brasserie toulousaine ferme ses portes après avoir été fondée et tenue par une dynastie de grands brasseurs alsaciens : la famille HAFFNER, implantée dans Toulouse, Lavaur et Luchon depuis 1872. En 2002, Georges HAFFNER, le dernier brasseur luchonnais, rencontra Alain CAYUELA pour valider ensemble l'adaptation moderne de cette bière 100% toulousaine, basée sur la recette de 1872 et de toute l’expérience de sa famille. La rigoureuse sélection des matières premières, le respect des méthodes pluricentenaires de brassage - associées à un choix méticuleux et sans concession dans le matériel de brassage, de fermentation, de garde et de filtration, permettent à notre Brasserie d’atteindre un niveau de qualité très élevé. Nos bières ne sont pas pasteurisées afin de vous transmettre le goût authentique d’un produit artisanal.

La Perle Toulousaine

Microbrewery created in 2012. It produces certified organic beer that is distributed in organic food stores in Toulouse as well as in St Aubin market in (most photos published here have been taken in this market). Most of the brews are inspired in Anglo Saxon style ales and lagers although using local malt and European hops. They also contain raw barley in around 40% of the grains except Viva Zapata that is a pure malt lager. Sunset Blonde Ale as well as Dark Lager contain also raw oat. The Gunners' Choice is a Pale Ale beer that contain buckwheat malt as well as barley malt and raw barley. The Asbury Park Lager has a more classic taste typical of low fermentation yeasts. Easy Rider IPA is a triple IPA at around 9%. The Hot Rod IPA is an IPA containing a great deal of American hops and it is sometimes dry hopped (we have stopped dry hopping because at the end of the tank the beer turned a bit acid and we are currently studying another ways for dry hopping without this inconvenient).
