    La principal característica de la cerveza 1758 es su segunda fermentación en la botella, una vez finalizada la fermentación de la cerveza en fermentadores troncocónicos de 200 litros tenemos nuestra cerveza terminada, pero sin gas, gracias a los azucares que se añaden a la cerveza cuando ésta sale del fermentador primario, las levaduras que hay en suspensión comenzaran una nueva fermentación (segunda fermentación) en la botella al estar la botella cerrada el CO2 producido carbonatar nuestra cerveza de forma natural y espontánea, produciendo una corona de espuma cremosa y duradera.
