He focuses on using as many locally sourced, fresh ingredients he can and is lucky to have the purest Scottish water to ensure the best possible craft beers can be made. The beers are not filtered or messed and traditional brewing clarification methods are used to retain all the lovely flavours and all the beers are naturally carbonated through secondary fermentation which enables the important bottle conditioning time you need to ensure you receive a top quality product. He does sometimes brew to certain beer styles but doesn't want to be tied down by restrictions and he believes the best beers are made by being inventive and thinking out of the box and putting your own spin on what you do. The time of boring bland beers in gone and it's time to try new things and open the doors to new flavours and enjoyment. A lot of love, care and attention goes into each beer created and quality, taste and customer satisfaction are the most important aspects of all the beers. He loves to brew, he love to invent and he is proud to be here. He only brew beers that he believes in.
