## About

Situato in posizione panoramica tra la Valle Nizza e quella del Taglione, il Birrificio Edfil nasce nel 2012 a Regione Dogliano, piccola frazione di Agliano Terme, centro termale nel cuore dell’Astigiano rinomato per le sue acque salso-magnesiche e per il barbera.

L’idea della sua creazione è di Silvia Castagnero, del marito Daniele Mori e del fratello di lei Giovanni. La gestione della produzione è invece affidata al genero Gabriele Ormea, espertissimo e pluripremiato mastro birraio.

Le birre Edfil sono agricole e artigianali, realizzate esclusivamente con l’orzo prodotto in azienda: proprio a questo scopo, Silvia ha riservato oltre due ettari della proprietà di famiglia alla coltivazione di questo cereale.

Per la produzione delle birre, vengono impiegate soltanto materie prime di altissima qualità – quali la canapa, il miele di castagno o il mosto d’uva – la maggior parte delle quali, sempre prodotto o coltivate in azienda, al massimo acquisite rigorosamente a km 0.

Sono birre fatte a mano con amore in Piemonte. Ogni passaggio del processo di birrificazione viene eseguito in casa. Solamente la maltatura dell’orzo è affidata fuori al Cobi (Consorzio Italiano Produttori dell’Orzo e della Birra), una cooperativa di agricoltori marchigiani.
