Il Birrificio nasce a Sonnino nel 2021, nel complesso periodo del Covid-19, grazie all’impegno e alla tenacia del suo mastro birraio e factotum, Livio Lattanzi, e al costante supporto della sua famiglia. Dopo una prima fase di sperimentazione e apprendimento che tra il 2016 e il 2018 ha dato vita al progetto BIRRA OTTAVO COLLE, il Birrificio Terre di Confine inizia a prendere forma tra le mura di un casolare a Sonnino Scalo, al confine con il territorio di Priverno e a due passi dalla meravigliosa Abbazia di Fossanova.

Il birrificio, circondato da un bel giardino con alberi da frutto, è al momento composto da una sala cottura da 5 HL, 4 fermentatori e 4 maturatori da 10HL. Tutte le fasi del processo produttivo vengono controllate direttamente in birrificio attraverso specifiche analisi microbiologiche che certificano la qualità dalla materia prima al bicchiere. L’impianto completamente manuale permette l’esaltazione dell’artigianalità del prodotto finale.
