Il Birrificio dell'Aspide nasce nel 2011 in un paesino del Cilento. 
La nostra filosofia:
La sala cottura a fuoco vivo disegnata dal birraio e realizzata a mano, caratterizza il mosto con caramellizzazioni non imitabili dai moderni impianti a vapore.
Inoltre, rispettiamo la millenaria tradizione birraria fermentando il mosto in tini aperti.
Il nostro lavoro:
Un aspetto fondamentale della nostra produzione riguarda la gestione dei lieviti, che vengono propagati in birrificio, il quale, vanta di un piccolo laboratorio dotato di microscopio, propagatore autocostruito e una piccola banca di lieviti, tra cui alcuni lieviti autoctoni. Questo studio costante ci ha consentito di creare prodotti unici tra cui il nostro fiore all'occhiello, la Belle saison, fatta con un lievito isolato dalla buccia di una mela cotogna.
