## About

Nella storia dell'isola di Creta, perla della civiltà minoica, Brùton era il nome dato ad una bevanda prodotta con cereali fermentati, molto simile alla birra. Abbondanti offerte di Brùton caratterizzavano i riti dedicati al Sacro Dio Toro, il potente ed invincibile Minotauro, rinchiuso nel labirinto del Palazzo di Cnosso.

Il richiamo a questa tradizione lo si trova nel nostro logo, una testa di toro stilizzata che vuole ricordare la figura mitologica del Minotauro.

Il birrificio Brùton nasce alle porte di Lucca, dalla passione di Iacopo Apo Lenci per la birra buona e di qualità. Dopo anni di birra fatta in casa e viaggi alla ricerca dei gusti migliori, nel 2006 inaugura il birrificio sulla riva del fiume Serchio, in un edificio rurale, tipicamente toscano.

All'inizio Iacopo affianca alcuni birrai professionisti per studiare e correggere le ricette delle prime birre. Nel 2009 incontra Andrea, al quale decide di affidare la produzione, per potersi dedicare maggiormente alla ricerca e ai nuovi progetti, pur continuando a lavorare in sinergia con la produzione.
