Quando nel 1994 Raffaele Longo inizia a produrre la sua birra artigianale, il Salento è un territorio votato alla produzione vitivinicola, le cui radici affondano in una tradizione molto antica. A ispirare il lavoro del mastro birraio sono soprattutto la passione e la ricerca continua di un prodotto in grado di fornire un valore aggiunto, una nuova linfa a un panorama agro-alimentare già ricco e variegato.

Ed è così che a Lecce, nel 2008, passione, ricerca, amore per il territorio ed esperienza maturata nel corso degli anni, danno vita al birrificio B94. Un progetto pionieristico tutto salentino che conserva però intatte le peculiarità originarie del 1994: una birra artigianale che nasce dalla costante cura e attenzione alla selezione dei migliori ingredienti e al miglioramento del processo produttivo. Il risultato è una gamma di birre prodotte senza alcun trattamento di pastorizzazione, né microfiltrazione, che si ispirano a stili continentali di alta fermentazione e sono sottoposte a rifermentazione.

Con lo sguardo rivolto lontano e il cuore radicato nel territorio pugliese, continua la sperimentazione del birrificio B94, reinterpretando stili birrari internazionali con l’impiego di prodotti della propria terra, innescando affascinanti e sorprendenti contaminazioni tra ingredienti solo apparentemente distanti.
