Todo empezó mientras uno de los socios de Cervecería del Sur estaba estudiando para un exámen de bioingeniería y vió en el libro un ejemplo de usos industriales de la levadura. En ese mismo libro figuraba el procedimiento para elaborar cerveza casera. De allí en más, la curiosidad por intentar hacer cerveza llevó a dos de los socios a contactarse con el grupo de cerveceros caseros del uruguay y comenzar junto con ellos la increíble experiencia de desarrollar y elaborar sus propias recetas de cerveza. Seguidos por otros 3 amigos, estuvieron 2 años desarrollando diferentes recetas de cervezas rubias, negras, fuertes, suaves, para consumo propio. Sin esperarlo, dos bares de Montevideo que habían probado sus cervezas en diferentes reuniones, les pidieron si podían buscar la manera de vender la cerveza que elaboraban. Fue así como los 5 actuales socios, decidieron formar la empresa en enero del 2008 y largar al mercado varias de las recetas que habían desarrollado como cerveceros caseros. Luego de un año de instalar el equipamiento necesario y ajustar el proceso de elaboración minuciosamente con la escala que requiere una microcervecería, Cerveza DAVOK salió al mercado en The Shannon Irish Pub, incluyendo dentro de sus estilos la primera cerveza personalizada del país, la Shannon Dunkel. La marca DAVOK surgió luego de una intensa lluvia de ideas elaborada con varios familiares y amigos.
