Pen Druid is a 27 acre permaculture operation at the foot of the Blue Ridge Mountains and Shenandoah National Park in Rappahannock County, VA. It was started by three brothers + Lain, Van, and Jennings Carney + in 2015, with a focus on native yeast and spontaneous fermentation of beer. They employ traditional methods used in Belgium and Germany, utilizing a coolship and a wood+fired brewhouse. NATIVE YEAST BEER PROGRAM- yeast cultured from a small winter flower in 2015, produces distinctly original tasting beers carbonated through traditional spunding or bottle and keg conditioning for superior carbonation and tiny bubbles. SPONTANEOUS BEER PROGRAM - draws inspiration from the traditional brewing methods of the Lambic brewers in Belgium's Senne River Valley, creating Gueuze and fruited Lambics. Pen Druid's spontaneous beers are carbonated using traditional methods, adding small amounts of sugar (wort, honey, dextrose, etc.) before packaging. The fruited spontaneous follows a traditional approach, using the best beer for blending. The brewery avoids using "saisons" or other non+traditional "sour" beers in fruit blends.
