3 Crates Brewing startede som et lille åbent øllaboratorium i et hjørne hos Thy Whisky, da jeg bryggede urt til deres whisky i et års tid. Det tog mere fart efter en crowdfunding-kampagne, hvor jeg prøvede at rejse penge til nye gæringstanke, men endte med så stor opbakning, at der også blev råd til et helt nyt (meget) lille bryggeri i direkte forbindelse med min kaffebar og nu også brewpub HAANDPLUK i Klitmøller, Thy. Øllene fra 3CB sælges stadig udelukkende hos HAANDPLUK, da produktionen og de enkelte batches er så små. Årsværket er på ca 500-750 liter, og et enkelt batch på 20-30 liter. Bryggeriet er stadig mest af alt et åbent øllaboratorium, hvor jeg leger med mange forskellige stilarter. Bryggeriet er ikke økologisk certificeret, men jeg brygger stort set udelukkende på økologisk malt fra Gyrup Gårdmalt her i Thy, bruger såvidt muligt økologisk humle og gær - et levn fra opstarten på Gyrup Gård.

The story of Amager Bryghus is the story of two old friends, Morten Valentin Lundsbak and Jacob Storm, who were determined to turn their passion for good beer into a professional career. In their infinite wisdom and with considerable foresight they chose to write about fermentation processes in beer, and many, many home brewing experiments down the road they had gotten advanced enough to actually open their own brewery in April 2007. To their own surprise – not to mention that of their customers – they succeeded in brewing beer that was tasty enough to actually sell – from Sundby to Sydney. In December of 2011 their original equipment was finally deemed too small; new brewing equipment was procured, and an assistant brewer (René Hulgren) was hired – all of which led to a doubling of the beer production.
